“The pork belly that Amy makes is completely different from any pork belly I’ve ever tried before. Its unique preparation doesn’t compare to any other I’ve had. In my Asian culture, pork belly typically appears reddish brown in color, and is more salty. The way Amy makes it, I like the sweet and smoky scent and taste of the charred brown sugar on the skin. It’s crunchy on the outside, while the meat is juicy on the inside, and not dried out. The combination of the sweet and savory flavors, crunchy skin, and juicy meat is so good. I usually eat pork belly when it’s prepared in fried rice, soup or a noodle dish like Pad Thai. I never get bored with it because I can enjoy it differently each time. But Amy’s pork belly is perfect to eat all by itself. I especially like that I can eat the crunchy skin separately before the rest of it is cut into smaller pieces!”
