Amped Up Avocado Mash Toast
August 26, 2024Several years ago, avocado toast seemed to burst onto, and there remain, health conscious menus everywhere. Breakfast, brunch, lunch, snack…it’s a versatile option. And, with its single vegetable serving and good amount of healthy fat, it’s a nice idea that works well with a variety of dietary considerations.
But this protein proponent has been skeptical. Where’s the “sustenance?” As one who is in the habit of enjoying a savory breakfast daily to ward off the “glucose rollercoaster,” I like to include a substantial amount of protein in my morning meal, which fuels me for several hours, and well up to lunchtime.
With that in mind, I’ve amped up my approach to avocado toast. To a small, ripe avocado, I always mash in one hard-boiled egg. If I have some fresh bacon pieces or bits in the fridge, I add some of those, too. I season the mix with smoked sea salt, black pepper, garlic powder and, often, some harissa for added pizzazz.
My avocado mash is a fairly quick preparation. It can be spread on bread, crackers or any type of toast of choice. But don’t take the first bite yet! I like to slip in a slice of my favorite mild cheese between the base and the mash for additional protein. For a final healthy flourish, I top it off with a small handful of fresh arugula, a light drizzle of garlic infused olive oil, and a sprinkle of freshly ground pepper.
Tasty and totally satisfying, that’s an avocado mash toast I can get behind!
